Four generations have followed one another to write the history of our House and to perpetuate a family expertise based on respect for nature and tradition.
At the helm of the estate since 1990, Fabrice Bertemès is driven by this same deep passion for the lands and the wines of Champagne.
Fabrice Bertemès devotes all his energy to bringing out the very best from these exceptional terroirs. His goal is to create singular wines, filled with history and emotion, to be enjoyed and appreciated on any occasion.
Generational Memory: Growing up in a winemaking family, Fabrice developed a "sensory map" of his vineyards. He doesn't just taste juice; he tastes the specific plot, the age of the vine, and the mineral soul of the chalk.
The Art of "Assemblage": Creating a balanced Champagne requires the ability to project how a still wine (vin clair) will evolve after years of aging. Fabrice possesses the rare skill to identify the exact acidity and structure needed today to ensure elegance five years from now.
A "Chalk-First" Approach: Fabrice’s palate is highly sensitive to salinity and minerality. He intentionally selects the most precise expressions of his fruit to ensure his wines remain vertical and crystalline rather than heavy, a hallmark of his signature style.
The name of this bottle itself, "Champ de 8 Jours" (Field of 8 Days), is steeped in local history, referring to the traditional time it once took to harvest this substantial and high-quality parcel.

The Terroir & Exposure: Located on the prestigious North-facing slopes of the Montagne de Reims, this plot is characterized by its exceptional chalk depth. The North exposure ensures a slow, steady ripening process, which is the secret behind the incredible tension and freshness found in the wine.

The Pinot Noir Purity: This parcel is renowned for producing some of the most refined Pinot Noir in the entire region. Unlike the heavier, more muscular Pinot Noirs from south-facing slopes, the fruit from "Champ de 8 Jours" is crystalline, precise, and vibrantly aromatic.

Aromatic Profile: Wines sourced from this plot typically exhibit a signature smoky minerality and "flinty" notes. You will find a delicate balance of red citrus (like blood orange), wild strawberry, and a saline finish that speaks directly to the Belemnite chalk subsoil.

This is a single-plot (monoparcelle) Champagne of exceptional pedigree. 'Le Champ de 8 Jours' is a vineyard of extraordinary quality, and this cuvée is produced in extremely limited quantities—only 1,000 bottles are crafted. This prestigious bottling is reserved exclusively for the finest years, personally selected by Fabrice Bertemès for their character and potential.
Robe: A deep, luminous golden hue with shimmering copper reflections. The effervescence is fine and persistent, forming a delicate and creamy collar.
Nose: Initial notes of crunchy red fruits (redcurrant, wild strawberry) and dark cherry. The Mailly Signature: A distinct smoky minerality and hints of spice (white pepper, star anise). Maturity: As it breathes, aromas of toasted brioche, honey, and dried figs emerge.

In the world of Champagne, a Clos is far more than just a vineyard; it is a historic and geological sanctuary. Traditionally, a Clos is a single vineyard plot entirely enclosed by stone walls. There is only 33 clos in Champagne among the 288.000 plots !
From Beaumont - Grand cru
Robe: Its pale, silvery-hued robe reveals pretty, delicate bubbles.
Nose: Initial aromas of sweet almonds set upon a base of blond tobacco and sweet spices.
Palate: A delicate attack on the palate, fresh and chalky, leading to a very pronounced mineral development through to the finish.

Le Clos Virgile: A Parcel of Hidden Character
The Clos "Created in 1994 from a 24-are plot (0.24 hectares) within a wooded park, Clos Virgile was born after a special request made by Jerôme's parents. Upon becoming the owner of a 'clos,' his father decided to plant a vineyard right at the edge of the property, adjacent to its historic buildings. The circle was complete. To highlight its highly symbolic dimension, a very special bottle was dedicated to it—acting as a showcase for the 2,000 bottles produced each year. Following in his father's footsteps, he has maintained the same tradition: a single-plot blend consisting of 67% Chardonnay and 33% Pinot Noir, produced only in Vintage years and aged in its original large oak vat (foudre).
A Centennial Legacy: With 100 years of family experience, Jérôme Portier stands as the 4th generation to guard these precious lands. This century has been dedicated to a singular goal: the perfection of Grand Cru viticulture.
Jérôme’s expertise is built upon the collective wisdom of three generations before him. This deep-rooted "savoir-faire" allows him to navigate the specific micro-climates of the northern Montagne de Reims, where the Pinot Noir and Chardonnay achieve a rare balance of power and extreme finesse.
For Jérôme, "high quality" is not a marketing term but a daily technical rigor. From precise pruning to bespoke vinification, every step is designed to honor the Grand Cru status. His wines are defined by their crystalline purity, incredible aging potential, and a sophisticated mineral signature.
The Keeper of Secrets: As the current custodian of the estate, Jérôme blends this historic depth with a modern technical precision, ensuring that the Portier name remains a benchmark for connoisseurs looking for Champagnes rarely exported.

From Ambonnay - Premier cru
The Extra Brut represents the finest expression of Mathias’s expertise, produced in an extremely limited series of only a few hundred bottles. This low-dosage Champagne achieves a perfect harmony between the natural character of his grapes and the influence of the soil. Following a long aging process, the aromas are given the necessary time to meld, creating a cuvée of exceptional complexity, depth, and seamless union.
A Champagne of a great aromatic richness, dominated by aromas of ripe fruits (pear) and exotic fruits (pineapple), with notes of truffle, mocha and dried fruits. A smooth, greedy and very complex mouth, however still very fresh and mineral. Confidential bottles to savour between connoisseurs, at the aperitif or on a foie gras, a tagine with candied fruits, or a hazelnut cake.

Champagne Froment-Griffon
The history of Champagne Froment-Griffon is both a family legacy and a love story—a shared passion for the soil, the wine, and the magic of the bubbles.
The family has cultivated these vineyards for at least four generations, with Mathias’s parents officially founding the Froment-Griffon brand in 1970. Marie also descends from a long line of winegrowers, with heritage stretching between the Loire Valley and the Champagne region.
Following specialized studies in oenology and various professional experiences abroad, Mathias and Marie took over the family estate in 2002. Today, they are proud to uphold the family tradition, working daily at the estate to further develop and refine the identity of Champagne Froment-Griffon.
Deeply committed to nature, Mathias and Marie practice sustainable viticulture to minimize their environmental impact. By using grass cover-cropping and mechanical soil maintenance, they have significantly reduced herbicides with the goal of total elimination. They employ natural alternatives to insecticides and cultivate a portion of the vineyard following organic farming principles. Every stage of the process, from pruning to harvest, is performed entirely by hand. To ensure the highest quality, they adapt the pruning to each individual vine stock and perform meticulous disbudding and trellising.
