Grande réserve

From Avenay val d'or - Premier Cru

Robe: Its color is a light golden yellow. The fine mousse forms a beautiful string of bubbles.

Nose: It reveals scents of almond, hazelnut, and also orange zest and lemon dough.

Palate: Deep and smooth, expresses aromas of verbena, linden, citrus and also buttered smells and candied fruits. Delicate acidity gives a touch of freshness.

Blend: 70% Chardonnay - 30% Pinot Noir Aging: 5 years

Dosage: 8 gr/L

Aging potential: 5 more years

Champagne Gabriel Pagin.

 

Their champagnes are crafted through family expertise, respect for nature, and tradition. Roger Gabriel began the estate in 1946, harvesting his first vineyard in Avenay Val d'Or. In 1984, his son Pascal continued the work, focusing on sustainability. By 1999, they earned the AMPELOS certification for their environmental efforts. Their son Aurélien joined in 2011 as an oenologist, and in 2014, the estate received the Haute Valeur Environnementale certification.

 

Located in the heart of Champagne, Avenay Val d'Or is renowned for its ideal terroir, producing wines of finesse. Once served at royal courts, the village’s wines were favorites of Henry IV.

 

The 23.5-acre vineyard spans Premier Cru sites in Avenay Val d'Or and Mutigny, and Grand Cru plots in Avize and Cramant. The vines, averaging 30 years old, are farmed sustainably, allowing each terroir’s character to shine through in our champagnes.

Brut - Orion

From Villers Marmery - Premier Cru

Robe: Its golden hue releases a perfectly controlled effervescence.

Nose: The nose opens with fresh almond, pastry, and a toasted background.

It has a clean attack on the palate, with pear and balsamic notes, giving the Champagne a balanced character.

Blend: 100% Chardonnay.

Aging: 4 years

Dosage: 6 gr/L

Aging potential: 4 more years

Champagne Pierre Emmanuel Paquay

 

Pierre-Emmanuel Paquay, a third-generation winemaker from Villers-Marmery, created his own Champagne brand to reflect his vision. Raised in the family vineyards, he developed a passion for viticulture and freedom. After studying oenology and interning in the U.S., he returned to France to take over the estate, overcoming challenges to shape it into what it is today.

 

Inspired by his father, he embraced sustainable practices, eliminating herbicides in 2016 and earning HVE, VDC (2019), and organic (2023) certifications. Passionate about terroir expression, he meticulously crafts his cuvées, blending tradition, nature, and artistry.

 

The Little Fairy on his labels symbolizes Champagne’s magic. He also restored a traditional pressing center with Coquard presses.
