Robe: It showcases a straw-yellow color with hints of old gold and fine, persistent bubbles.
Nose: The aroma is intense, with pinot fragrances complemented by notes of blackcurrant liqueur, elderberry, crushed mulberry, and a touch of green mint. It evolves with hints of biscuit, clear honey, pineapple, and fig.
Palate: The palate presents a crisp attack, perfectly balanced by the wine’s subtle dosage. Toasted notes precede a burst of fruit flavors, including red-fleshed peach, yellow nectarine, and blood orange, offering a lingering finish.
Blend: 70% Chardonnay - 30% Pinot Noir

Champagne Fernand Thil
Champagne Thill’s story began in 1827 when Jean-Adam Thill was born in Luxembourg. His son Dominique established a vineyard in Verzy, Champagne, laying the foundation for the family business. In 1953, Fernand Thill launched the brand, passing his passion to his daughter Marie-Thérèse and later to Thomas, the current winemaker.
Located in Verzy’s Grand Cru area, the vineyard spans Verzy and Verzenay, cultivating Pinot Noir and Chardonnay to produce rich, complex wines. Committed to sustainability, Champagne Thill practices insecticide-free viticulture, preserving soil health and biodiversity to ensure the finest quality wines.
Harvesting in September leads to meticulous fermentation and aging in vats, ensuring exceptional wines. Blending defines their wines’ character. Bottles age in their cellars before manual riddling is practiced to remove sediment, achieving perfect balance and refinement.

Palate: The palate is equally impressive, complex and refined, with a balanced structure. Rich buttery and brioche notes complement the wine's juicy, taut character, offering a refreshing and well-rounded finish.

Champagne Perseval-Farge
Domaine Perseval-Farge, located in Chamery, a Premier Cru village in the Montagne de Reims, covers 4 hectares across six plots. The vineyard grows Chardonnay (40%), Pinot Noir (35%), Meunier (15%), and ancient varietals such as Pinot Gris, Petit Meslier, and Arbanne. The champagnes are traditionally pressed and aged on-site, with a strong commitment to sustainability, reflected in their "High Environmental Value" certification.
Managed by the fifth generation of the family, the estate produces wines under the Perseval-Farge label, maintaining a legacy of craftsmanship. Their wines are aged in wood barrels and blended with at least 40% reserve wines, with a minimum of five years on lees.
The estate's champagnes feature a balance of Pinot Noir, Meunier, and Chardonnay, enhanced by rare varietals for added complexity.

Nestled in Mailly-Champagne, they have been crafting Grand Cru champagnes for three generations. Today, the estate is managed by David Baudot and his wife Stéphanie, the granddaughter of Roger Braconnier.
Situated in the Montagne de Reims, their vineyard spans Grand Cru and Premier Cru communes. With a legacy rooted in traditional winemaking, they are committed to producing exceptional wines while respecting nature.
The family’s dedication to sustainable practices is evident in every step of the process. They focus on soil health through organic farming methods, reduce chemical use, and embrace biological pest control, ensuring a harmonious relationship between the vines and their environment.
